Chicken and Broccoli homemade Lasagna. Easy, delicious and fast to make!


Cooking is one of my passions. I really enjoy spending time in the kitchen preparing our most favorite dishes. Eating the same meals can get a little boring after some time. Right? How about tweaking recipes a bit and making the food you love more interesting?

Lasagna must be one of the most loved pasta dishes, dont' you agree? In fact I made it for dinner to celebrate Valentine's Day. The Man loves it! We love our men...let's make the food they like.

A homemade meal after a long work day could be the best gift you can give to them. Time, dedication and love are included in the recipe! Are there any men reading to support this statement? Sure there are...

Lasagna is a dish that can be modified and re-invented in so many different ways. Today I am sharing my Chicken and Broccoli Lasagna

CHICKEN AND BROCCOLI LASAGNA

INGREDIENTS:

Chinese broccoli {yes, you cut the stems off, please}
Half medium onion finely chopped
Two cloves of garlic finely chopped
A pound of ground chicken {we eat the super lean one}
Two to three teaspoons of tomato paste
Tomato sauce {Arrabbiata sauce}
Mozzarella cheese {cheese is good! use as you like}
Lasagna sheets {non-oven ready, please}
Oil
Salt and Pepper to taste
Oregano

DIRECTIONS:

Cook your Chinese broccoli in boiling water until tender. Strain and put aside.
Sautee your garlic and onion in a pan with oil until transparent. 
Add your ground chicken and cook until brown.
Add Oregano, Salt and Pepper.
Add tomato paste.
Once cooked put aside.

Cook your Lasagna sheets in boiling water {add a little salt and oil to your water} and follow directions in the package.

NOTE: I used a square Pyrex dish and layered three Lasagna sheets on each tier.

In the meantime shred your Mozzarella cheese.
Once your Lasagna sheets are cooked start placing them in your Pyrex dish.

Add some shredded cheese.
Then add some ground chicken.
Then add Chinese broccoli.

Add three more Lasagna sheets.
Add some shredded cheese.
Then add some ground chicken.
Then add Chinese broccoli.

Add some shredded cheese.
Then add some ground chicken.
Then add Chinese broccoli.
Add three more Lasagna sheets.

Yes, these directions look like the lyrics of song...a "delicious song"...I know...
And top your sheets with lots of Arrabbiata sauce and more shredded cheese?

NOTE: I like using Chinese broccoli because is more affordable than Spinach {which I would need tons of if because after boiled it turns to nothing!} Chinese broccoli is as nutritious! No, you won't notice the difference, it tastes wonderful!

*About Arrabbiata sauce: arrabbiato means angry in Italian. This fabulous sauce is made with garlic, tomatoes, red chili peppers and cooked in olive oil. Try it!

*Only nine Lasagna sheets are used in this recipe. We watch our waist line!

This recipe sounds and looks delicious! I am trying to cook with more chicken that beef and this a recipe I really like. Thanks for sharing.
